Chocolate Chia Pancakes

For the pancake mixture 

60 g of porridge oats (gluten free if desired) 

15 g cocao powder

1 tsb baking powder

1 ripe banana

125 ml of non dairy milk of your choice (almond, coconut or oat)

1 tsb chia seeds 

1 tbsp maple syrup (optional for sweetening) 

Chocolate sauce

1 tbsp cacao powder

2 tbsp of your choice (almond, coconut or oat)

1 tsb arrowroot powder and 1 tbsp water to mix

Method

1  Mix all the pancake mix in a blender until smooth and frothy. 

2. Spoon small amounts of the mixture on a heated pan and cook for approximately 2 minutes on each side. 

3.  Whisk up the cacao powder, milk and mixed arrowroot which has been mixed with water in  a saucepan and bring to boiling point. Turn down the heat and allow to simmer for a few minutes.  Add the arrowroot and water mix and allow to thicken over the heat for approximately 2 minutes.

4. Pour the chocolate sauce over the pancakes to serve.   Add some berries or mint leaves if desired.
